Lighting the fire with a barbecue

This past week I had the opportunity to attend a food fair with my students. We all had to work under crazy conditions, but the sun was not the only thing that was shining that day, my guys smile and professionnal attitude were also present. Imagine working at 32 degrees Celsius (90 degrees Farenheit), about 90% humidity, on dark asphalt and with no cover over our heads. As if this was not enough, we also where standing in from of blazing barbecues. Harsh conditions I will agree, but with a little motivation anything is possible and the feeling of achievement is amazing.

Most of them spent 30 hours under a sun of steel and none of them complained. Their job at that fair was to show people how to use a barbecue properly and how to cook better meats, fish and vegetables. All of my kids did great and I can proudly say that today, like the though papa bird that kicks his little out of the nest and hope that they don't end up flat on the ground bellow, that they will do well, that they will grow to become great cooks and maybe chefs.

This is the beginning of this blog, but the end of the my ride with these guys. A gang of newbies are coming on board soon and I would like to invite you the reader to come and witness the birth of the next bunch of amazing girls and guys that I have the honor to train. Will it be always fun? I doubt it. Will it be hell? Sometimes. Will I enjoy myself? Definitely.

Good success to all of you that are leaving me today to start a new carreer and may that fire that burns inside you never goes off. You all know that I am not going to say good luck, because it has nothing to do with how well you will do in your carreer, only hard work and passion will get you there. I might miss you.

I think i can say that for once i have been honored to have had a GREAT teacher!! PAHPAH !! you ARE the best..I would have done 90 hours under that killing sun if i would have known i had 3 more months of school !! just went too fast..I just LOVE that you are a BRAIn Y AK at what you do..Time that i had with you just wasnt enough..Would start all over!!
The challenge of those crazy time under the BBQ believe it or not made me 100 times better i know feel so confortable behind a grill..that i would take a position behind a GRILL!! ok maybe a big load for a beginer but i do feel more at ease.. Explaining to others how the way a BBQ works and the basics of GRILLING.. made my skills stronger..Love that i took The challenge!!Now that we are almost done with class and that we are off your boat..we need not only a blog chef but we need your ANTI-STUPID recepies.. what will we do without your SMARTNESS!! ill be hanging here alot.. BE YOUR BIGGEST FAN!! I like ZACK have a sad feeling got a pinch in my heart..:(:(!!

Yes sure , because you never make me disappointed . only me that always make a mistake . Now we all leave you to start the new life. That's so sad but we have no choice with our life. When I decided to go to lasalle college, i had my mind set to just do my school , and get on with my career. i never expected that i would develope such close relationships with my peers and have the opportunity to have such amazing, knowledgable chefs teach me. I have learnt so much over the past year and believe it or not i was actually thanking chef barbara in my mind today, while julienning a million carrots and celerie, for making us practice our cuts so often. I also feel very lucky to have been a student under you. You never hesitated to fill our minds, show us techniques and push us untill we made it! I will miss you and I will miss everyone I shared this past year with.

That was nice Chef,

I wouldnt trade anything for the experience I had taking this program at LaSalle. I had lots of fun, and will always be cooking amazing food for the rest of my life.
In my eyes Chef you are truley an amazing teacher who challenged us everyday and always pushed us to our full potential. Your passion for cooking is something I will never forget. You are a great Chef, and I thank you! I would also like to thank Chef Barbara for hepling me build a strong foundation.

This year was amazing, Ill miss the food, the laughs, the drama lol, and all of you!
